Pumpkin Crunch Cake

Oh LeAnn……… I’m so going to be making this! I’m totally going to say I made it up too! haha!

  • 1 large can pumpkin
  • 1 large can evaporated milk
  • 1 ½ cups sugar
  • 2 tsp. pumpkin pie spice
  • 1 tsp. salt
  • 4 eggs
  • 1 box yellow cake mix
  • 1 cup chopped pecans
  • 1 ¼ sticks margarine

Beat pumpkin, milk, sugar, pumpkin pie spice, salt and eggs together until well mixed.

Pour into a greased 9”x13” pan.

Sprinkle dry cake mix over pumpkin mixture.

Sprinkle chopped pecans over cake mix.

Drizzle melted margarine over all.

Bake at 350o for 50 to 60 minutes.

Serve with whipped cream or vanilla ice cream

  1. It’s AWESOME, I would almost skip turkey & dressing and just feast on this! Once you’ve tried this, I have several other variations with peach, apple or cherry pie filling that you must try too!
