Your Basic Meatball Sandwich

This is the quickest and easiest dinner recipe I have come across all summer.  For those of you who like to make your own meatballs it will require a little more work. We have been buying large bags of premade meatballs from BJ’s and I think they’re great. I have a family recipe for meatballs that are to die for but  I haven’t had the freezer space to make them until recently. So very simply go get some meatballs from the bag ;) and add to your favorite pasta sauce.  I like to use Newman’s Own Tomato and Basil.   When you’re sauce is heated and meatballs are (cringe) not frozen anymore you’re ready for the bread part of the equation.

Never underestimate how important bread choice is for a sandwich.  This idea came to me at 9pm when I didn’t feel like cooking, but had already heated up the meatballs.   We were going to have these Texas Toast ciabatta rolls with our pasta.  So when I broke the news to my husband that I wasn’t gonna cook I came up with the idea in a flash of guilt!   Preheat your oven to 400 degrees and throw the ciabatta bread in the oven.  Set timer for 5-7 mins right away.  As soon as the edges start to brown take out of the oven.  Next place 6 meatballs on one piece of toast.   Take another piece of ciabatta and place on top.  Use your whole hand and push the sandwich down a bit.  Slice and serve.

The genius behind this sandwich is the ciabatta toast.   The bread is fantastic.  It’s not chewy so when you take a bite your teeth cut through the bread easily and then into the meatballs giving you a perfect bite each time.  More importantly though if you’ve ever had a bad meatball sub/sandwich you don’t get that too hot shooting meatball out the side of your sandwich issue that I absolutely hate.   This is a 10 on the yummy scale… and very very filling!  One sandwich was enough for me without any sides.  A small caesar salad would go nicely with this though.  It’s good to have a little something green with your guilty pleasures!

    This is a fabulous idea! While I don’t have babies around; I do like to have some ready to prepare food for my teenage son to be able to grab and go at what seems like all hours of the day…and night!! This is a great tip for my college daughter too!
